Grain, not flour
Whole grain arrives from three farms inside the district and is milled here in the week it is used. It is why the flour smells of something, and why we cannot mill very much of it in a day.
Overnight, in the cold
Dough is mixed in the afternoon and left in the cold room until three in the morning. A long cold prove is what makes a loaf keep for three days without anything added to it.
Roasted for filter
We roast on Mondays and for the brewer rather than for the machine, which is why the espresso reads lighter than most. Ask and it will be pulled longer.
The mill runs before the ovens do
Grain arrives whole and is milled here, which is the reason the flour smells of something and the reason we cannot bake very much of it in a day. A dough is mixed in the afternoon, proved through the night in the cold, and baked between three and six in the morning; nothing is part-baked and nothing is frozen. The counter opens at seven with whatever came out of the oven, and when a bread is gone it is gone until tomorrow.

The wholewheat loaf is the only one in this city that still tastes of wheat three days later. I buy two and freeze one, and even the frozen one is better than most bakeries fresh.
They sell the flour they bake with, which nobody else does, and the counter told me exactly how much more water it needs. My own bread got better because of a two-minute conversation.
Excellent croissants and a genuinely good filter. Only warning is that the good stuff is gone by eleven on a Sunday — go early or order the night before.
